Ghee Processing: Processing:

  1. Selecting the Butter: Choose a high-quality unsalted butter. The absence of salt ensures that the ghee does not contain any impurities.
  2. Melting the Butter: Place the unsalted butter in a heavy-bottomed pan over low to medium heat. Allow it to melt gradually.
  3. Simmering: Once the butter has melted completely, reduce the heat to simmer. As the butter simmers, the water content will evaporate, and the milk solids will separate.
  4. Skimming and Clarifying: During the simmering process, foam will form on the surface. Use a spoon to skim off this foam periodically. The butter will go through various stages, from a foamy surface to clear golden liquid.
  5. Colour Change: As the butter continues to simmer, it will undergo a colour change from yellow to a rich golden brown. The milk solids at the bottom of the pan will start to brown, contributing to the characteristic nutty flavour of ghee.
  6. Straining: Once the liquid becomes clear and golden brown, and the milk solids at the bottom have turned brown, remove the pan from heat. Allow it to cool for a few minutes. Then, strain the liquid through a fine mesh or cheesecloth into a clean, dry container to separate the remaining milk solids.
  7. Cooling: Allow the strained ghee to cool to room temperature. As it cools, it will solidify slightly.
  8. Storing: Store the ghee in a clean, airtight container. Ghee has a longer shelf life than regular butter due to the removal of water and milk solids, which helps prevent spoilage.
