Curd Processing:

Curd processing involves a series of steps to transform milk into the creamy and tangy dairy product known as curd. Here is an overview of the typical curd processing procedure:

  1. Milk Reception: The process begins with the reception of fresh milk. High-quality milk is essential to produce flavourful and nutritious curd.
  2. Milk Standardization: The milk is standardized to ensure a consistent fat content. This step is crucial for achieving the desired texture and flavour in the final curd product.
  3. Heating: The milk is then heated to a specific temperature around 85-90°C, to denature the proteins and eliminate any unwanted bacteria. This process also helps in developing the texture of the curd.
  4. Cooling: After heating, the milk is cooled down to the inoculation temperature between 40-45°C. This is the temperature range suitable for the growth of the bacterial cultures that will ferment the milk.
  5. Inoculation: Starter cultures containing specific strains of lactic acid bacteria, such as Lactobacillus bulgaricus and Streptococcus thermophilus, are added to the milk. These bacteria initiate the fermentation process, converting lactose into lactic acid.
  6. Packaging: After Inoculation it is packaged into containers or Pouches.
  7. Cooling and Storage: The packaged curd is cooled rapidly to stop the fermentation process and maintain its freshness. It is then stored under refrigeration until ready for distribution.
